Ingredients
  

  • 1 ounce pork rinds
  • 1/4 cupcup shredded mozzarella cheese
  • 2 tbsp full-fat cream cheese
  • 1 large egg

Instructions
 

  • Place pork rinds into the food processor and pulse until finely ground.
  • Place mozzarella into a large microwave-safe bowl. Breakdowncream cheese into small pieces and add them to the bowl.Microwave for 30 seconds, or wait until both kinds of cheese aremelted. It can easily be stirred together into a ball. Add groundpork rinds and egg to the cheese mixture.
  • Remain stirring until the mix forms a ball. If it cools too much and cheese hardens, microwave for ten more seconds.
  • Separate the dough into four small balls. Put each ball of dough between two sheets of parchment and roll into a ¼" flat layer
  • Put the tortillas into the dutch ovenbasket in a single layer,working in batches if necessary.
  • Alter the temperature to 400°F and set the timer for 5 minutes.
  • Tortillas will be crunchy and firm when fully cooked. . Serve immediately
