Ingredients
  

  • Vinaigrette
  • 1/2 cup olive oil
  • 1/2 cup avocado oil
  • 1/4 tsp pepper
  • 1/2 cup red wine vinegar
  • 2 tbsp Dijon vinegar
  • Veggies
  • 4 zucchinis, halved
  • 4 sweet onion, quartered
  • 4 red pepper, seeded and halved
  • 2 bunch green onions, trimmed
  • 4 yellow squash, cut in half

Instructions
 

  • Take a small bowl and whisk in mustard, honey, vinegar, salt, and pepper. Add oil and mix well
  • Set your Power XL Smart XL Grill to GRILL mode and MED setting, set timer to 10 minutes
  • Transfer onion quarter to Grill Grate, cook for 5 minutes
  • Flip and cook for 5 minutes more
  • Grill remaining veggies in the same way, giving 7 minutes per side for zucchini and 1 minute for green onions
  • Serve with mustard vinaigrette on top
  • Enjoy!
