Ingredients
  

  • 2 lblb white potatoes
  • 1 peeled and grated
  • 1/2 cup scallions
  • 1/2 tbsp finely chopped
  • 1 tbsp freshly ground black pepper
  • 1 tbsp fine sea salt
  • 1/2 tbsp hot paprika
  • 2 cups Colby cheese, shredded
  • 1/4 cup canola oil
  • 1 cup 1 cup crushed crackers

Instructions
 

  • Boil the potatoes until soft. Dry them off and peel them beforemashing thoroughly, leaving no lumps.
  • Combine the mashed potatoes with scallions, pepper, salt, paprika, and cheese.
  • Shape mixture into balls with your hands and press with your palm to flatten them into patties
  • In shallow dish, combine the canola oil and crushed crackers. Coat the patties in the crumb mixture.
  • Cook the patties at 360degreesF for about 10 minutes, in multiple batches if necessary.
  • Serve with tabasco mayo or the sauce of your choice.
