  • 1/2 tsp salt
  • 1 eggplant, peeled and sliced
  • 1 cup egg, whisked

Instructions
 

  • 1. Toss the breadcrumbs with salt in a tray. Dip the eggplant in thewhisked egg and coat with the crumb’s mixture.
  • Place the eggplant slices in the Dutch oven basket
  • Set the Dutch oven basket inside the Dutch oven toaster oven and close the lid. Select the Air Fry mode at 400°F temperature for 20minutes. Flip the slices after 10 minutes then resume cooking. Serve warm.
