Ingredients
  

  • 17 oz ground beef
  • 1 cup baby spinach
  • 5 bread slices, cubed
  • 1/4 cup parsley
  • 1/4 cup milk
  • 1/4 cup chopped mint
  • 1 yellow onion (minced)
  • 1 tbsp olive oil
  • 7 oz cherry tomatoes (halved)
  • 1 egg whisked
  • 2 garlic cloves (minced)
  • 2-1/2 tsp dried oregano
  • Cooking spray
  • Salt and pepper to taste

Instructions
 

  • Preheat the dutch oven to 3700F
  • . Add the bread and milk and allow to soak for 3 minutes. Squeeze and transfer to another bowl.
  • To the bread in the bowl, add egg, salt, pepper, mint, parsley, garlic, and onion. Stir and shaped into balls using ice-creamscooper.
  • Spray the meatballs with cooking spray, place in your dutch ovenand cook for 10 minutes.
  • In a bowl, mix spinach, cucumber, and tomatoes. Add the meatball, oil, pepper, salt, lemon juice, and yogurt. Toss, and serve.
