  • 4 lb short ribs (cut into small pieces)
  • 1 dried Portobello mushroom
  • 1 yellow onion (chopped)
  • 1 cup chicken stock
  • 6 thyme sprigs (chopped)
  • 1/4 cup tomato paste1
  • 1 bay leaf
  • 1 cup dark beer
  • Salt and pepper to taste

Instructions
 

  • Preheat the dutch oven to 3500F.
  • In a pan that fits into your dutch oven, heat oil over medium heat, add onion, stock, tomato paste, beer, mushroom, bay leaf, and thyme. Simmer for 3-5minutes. Add the rib and transfer to the dutch oven, cook for 40 minutes.
