Ingredients
  

  • 2 russet potatoes
  • 2 tsp olive oil
  • 1/4 cup yogurt
  • 2 tbsp nutritional yeast
  • 1/4 cup milk

Instructions
 

  • Scrub the potatoes and allow them to dry
  • Rub Each potato all around with oil
  • Preheat your fryer to 400 degrees
  • Cook for 30 minutes, turn each potato and cook for another 30minutes.
  • Let the potatoes cool plentiful to handle them, then cut them in halfvertically.
  • Scoop out the potato's center meat leaving enough around the edges to create a “bowl.”
  • Transfer the scooped potato to another bowl.
  • Mix the scooped potato, milk, yogurt, yeast, salt, and pepper tocreate a smooth filling
  • Slice the spinach and stir it into the mix
  • Fill each potato half with the mixture.
  • Lower the temperature on your fryer to 350 degrees
  • Cook each half for an additional 5 minutes.
