Ingredients
  

  • 1 oz pork rinds
  • 1/2 cup grated Parmesan cheese.
  • 2 medium zucchinis
  • 1 large egg.

Instructions
 

  • Slice zucchini into ¼-inch-thick slices. Place among two layers ofpaper towels or a clean kitchen towel for 30 minutes to removeexcess moisture
  • lace pork rinds into the food processor and pulse until finely ground. Pour into a medium bowl and mix with Parmesan
  • Beat egg in a small container.
  • Drench zucchini slices in egg and then in pork rind mixture,coating as completely as possible. Carefully place each slice intothe dutch oven basket in a single layer, working in batches asnecessary.
  • Adjust temperature to 320 Degrees F and set the timer for 10minutes. Flip chips halfway through the cooking time. Serve warm.
